做的凉皮为老裂开是因为面浆浓度没有调好
手工凉皮做法:
1.面粉10斤加温水5斤和成面团,静止醒发30分钟。
2.将面团放入常温水中揉洗出面筋,面糊低温沉淀5-8小时。
3.将面糊去掉上部清水,搅匀后测量浓度为16-18波美度,再加入8-10克筋力源(提前溶解)搅拌均匀,静止20-30分钟后过滤。
4.旋子擦油放入开水上预热,再加入300克凉皮糊,摇晃匀后放入开水锅内,盖锅蒸2-3分钟即可出锅。
5.面筋加泡多源蒸30分钟,熄火停5分钟出锅。
